Asparagus is a great spring vegetable and one of my personal favorites, and who doesn’t love bacon? So I decided to combine the two. I’m certainly not the first person to do this, but that doesn’t make it any less delicious and it was the perfect way to add some green to our Easter dinner. Adding the scallions gives brightens up the asparagus and gives it some bite. The recipe below will make 4 servings or “bundles.”
Bacon Wrapped Asparagus
- 1 1/2 pounds asparagus, trimmed
- 2 bunches scallions, trimmed
- 4 slices bacon
- salt and pepper, to taste
- EVOO
Preheat the oven to 400 degrees.
Season the veggies with salt, pepper and oil. Make sure that they’re evenly coated on all sides. Divide the veggies into 4 bundles, taking care to be consistent with the asparagus to scallion ratio in each.
Wrap each bundle with a slice of bacon and place on a cookie sheet. Place in the oven for 10-12 minutes, rotating the veggies about halfway through.
