Summery Red Cabbage Slaw

This summery slaw made a perfect addition to burger night this week. As I’ve mentioned before, I really dislike mayo-based slaws but I love the crispness of cabbage. I used some red wine vinegar and lime juice to make it tangy and some honey to smooth it over and add some sweetness. Of course I like to make everything spicy, so some red pepper flakes went in there as well.

This dish is sure to be a big hit at any BBQ or summer party!

Summery Red Cabbage Slaw

  • 1 head red cabbage
  • 1/3 cup red wine vinegar
  • 2 limes, juice and zest
  • salt and pepper, to taste
  • 2 tsp red pepper flake
  • 1 tbsp honey

Remove the outer leaves of the cabbage and cut into quarters. Remove the core from each quarter and finely chop the rest. Add the cabbage to a large bowl.

Into the bowl toss the other ingredients and mix everything together. Cover with plastic wrap and refrigerate for at least 30 minutes before serving. Give it another good stir before setting on the table.
