Red Hot Black Beans

  • 1/2 yellow onion, diced
  • 2 red jalapeños, diced
  • 4 cloves garlic, minced
  • 15 oz can black beans
  • salt and pepper, to taste
  • 1 tsp oregano

Heat some oil in a medium sauce pan and saute the onion over medium heat. When the onion begins to soften, add in the peppers and the garlic and sauté for another few minutes.

Add in the beans, including the liquid, as well as the salt, pepper and oregano. Turn the heat up to high and bring the mixture to a boil. Cover and reduce to a simmer for 15 minutes, giving the beans time to cook and allowing the liquid to reduce down.
