Sesame Chicken & Broccoli
- 1 cup orzo, cooked to al dente per package directions
- 1 head broccoli, cut into florets
- 1 1/2 pounds boneless, skinless chicken thighs, cut into 1″ pieces
- 3 tbsp soy sauce
- 2 tbsp dry sherry
- 2 tbsp rice wine vinegar
- 1 tbsp sugar
- 1 tsp red pepper flake
- 1 tbsp sesame seeds
- large handful cilantro leaves, for garnish
Prepare the orzo according to the package directions. At the same time, bring one cup of water to a boil in a medium sauce pan. Once boiling, add the broccoli and cover. Allow the broccoli to steam for 3-5 minutes, until it’s fork tender and then drain.
Heat some oil in a large skillet and when it is smoking hot, add the chicken. Cook the chicken for about 5 minutes and then flip for another 5 minutes on the other side. While the chicken is cooking, stir the remaining ingredients (minus the cilantro) until evenly mixed. Add half of the sauce to the chicken and stir until the sauce becomes thick and bubbly.
Toss in the broccoli, orzo, and remaining sauce. Stir for another few minutes until the sauce is reduced down and everything is well mixed. Garnish with the cilantro and serve.
